This week, we received: carrots, peas, tomatoes, green onions, kale, parsnips, and bok choy.
We ate the carrots, peas, and even tomatoes raw as sides. (Some of our peas were too old to eat, so we had fewer peas than pictured.)
I combined this week’s and last week’s kale with the onion bulbs to make risotto. The baby, N, loves risotto.
I have plans to use the bok choy with some brown rice noodles, chicken, and whatever “stir-fry friendly” veggies we get tomorrow.
The parsnips sit and wait for next week, too.
