Summer CSA 2016: Week 20

This week, we received: 3 eggplants, 3 potatoes, half a container of grapes, half a watermelon, a red onion, a garlic bulb, 2 zucchini, a cucumber, and two tomatoes. The tomatoes this week were some of the best tomatoes we’ve received.

We ate the grapes, watermelon, and cucumber raw with different meals. The farmer said he made sure that we’d all have some watermelon for the holiday weekend; I forgot that Labor Day was coming up!

The eggplants, potatoes, two cloves of garlic, half an onion (and bacon) went into a modification of a recipe called “garlic mashed potatoes with eggplant.” I’d make this again – it was an easy way to make the eggplant, and the bacon tasted great!

I made guacamole, which used the tomatoes, garlic, half an onion, and a leftover jalapeño pepper from an earlier week.

I sautéed the zucchini with oil, salt, and pepper, and we ate it as a side.
