Summer CSA 2016: Week 7

This week, we received: some kale, some lettuce, two tomatoes, a head of cauliflower, and an onion.

We snacked on the cauliflower and the lettuce.

I made a warm salad with the kale, onion, and a Granny Smith apple, inspired by this recipe. I was surprised by how much I liked the apple in this dish.

We ate one of the tomatoes plain – so good! And we added the other tomato to some black bean quesadillas.

This was a really great CSA week for us. Scott asked us what we got, and after I told him, he said, “That’s all normal stuff!” And it was so easy to incorporate the veggies into our “normal” routine. Fingers crossed for this week.
