This week, we received: two heads of lettuce, some mustard greens, some Chinese cabbage, a half bunch of carrots, some mint, and three apples.
We ate the carrots raw on Thursday night, and the apples made their way into our lunches. And we’ve been eating lettuce salads. I am so thankful that most of our produce was low-prep this week.
I was planning to make a stir-fry with the Chinese cabbage and mustard greens. And I planned to make a mint and pecan (whole grain) Israeli couscous dish. But, we composted the greens, and I ate the mint plain. Scott wants to give the pecans to my parents.
