This week, we received: 3 heads of lettuce, a bunch of kale, 3 sweet potatoes, 3 small beets (which we didn’t split), and one Korean radish (which we didn’t split).
We got our CSA on Wednesday instead of Thursday because of Thanksgiving.
I roasted the sweet potatoes, beets, and radish as a side at Thanksgiving dinner. The Korean radish was not a hit; people thought it had an overpowering taste. I didn’t mind it.
We’ve been supplementing our lazy eating with salads of lettuce and kale. I’m so glad this week’s CSA was an easy one to cook with all the other holiday cooking and eating going on!
