CSA 2015: Week 2

Our ¼ CSA share included: A bunch of Red Russian kale, half a bunch of rainbow Swiss chard, half a bag of arugula, half a bunch of scallions, and a head of leaf lettuce. And we got 6 eggs again.

The kale and scallions went into a pesto that we ate with whole-wheat spaghetti. And I topped each dish with a fried egg for added protein; I got the idea here.

We ate the arugula, Swiss chard, and lettuce in salads. Here’s a picture of my to-go dinner the other night: an arugula and Swiss chard salad with reduced balsamic vinegar and goat cheese. (So good!)
