It is cold (feels like 9 degrees Fahrenheit) and snowy in Oklahoma today – something we’re not very used to this winter, since about a week ago temps were over 70 degrees Fahrenheit and most of us were wearing shorts.
On Saturday, Scott thought he’d want tacos to be our big meal of the week, but I vetoed that this morning and decided to make chili. (Not Texas chili, which is all meat, just normal person chili.)
This is my favorite chili recipe. It has ground turkey, black beans, corn, lots of spices and cocoa and honey. We also bought tortilla chips, cheddar cheese, and sour cream to dress it up a bit.
Monday and Tuesday will continue to be cold here – I hope the chili helps us keep warm for the next few days.
