It was Scott’s birthday on Thursday! And we were struggling to fit anything special into the day. This week is so busy! So, I did some “extra” things this year to make the day a little bit more of a celebration than we can typically pull off during a busy time of the semester.
Every year, we give each other a card with a hand-written letter in it about the year before and our future (it’s OK if you vomited a little in your mouth when you read that; it is a little sickly sweet). This year, I also got Scott a physical gift – a long-term, professional rain and snow gauge. Scott will use this rain gauge to participate in more citizen science data reporting – the Community Collaborative Rain, Hail, and Snow Network. He already reports the birds he sees to E-Bird.
I also made Scott cupcakes – chocolate cake with chocolate frosting – all from store bought materials. I didn’t have the time or energy to make anything from scratch. But I did want to make these special. So I incorporated Scott’s third (?)* favorite candy: Reese’s Peanut Butter Cups. I got the idea from a blog called Buttercream Bakehouse.
I poured a layer of batter on the bottom of the cupcake container, then placed a “snack sized” peanut butter cup and then filled the rest of the container with batter.
I hid all the wrappers from the candy, so Scott was surprised when he bit into a cupcake for the first time.
