This week, we got: carrots, cucumbers, tomatoes, and parsnips.
Our tomatoes look like they were left on the vine too long.
Carrots and cucumbers are my second and third favorite vegetables. We snacked on the carrots and one of the cucumbers. The other cucumber was cut up and put in a 1 part to 1 part solution of vegetable oil and white vinegar to make a quick pickle-like snack.
The tomatoes (or what we could salvage from the tomatoes) went into a Caprese salad with fresh basil from the container garden. This is why I planted basil and tomatoes – for Caprese salads!
Lastly, I pureed the parsnips with butter and chicken broth.
