Whole Wheat Flax Scones Recipe

About two years ago, I did a Google search for a scone recipe that uses whole wheat and ground flax seeds, but I didn’t find what I was looking for. After reading five scone recipes and one whole wheat and flax cookie recipe, I thought, “Meh. I’ll just make up a recipe.” And I did. And they’re good. Here’s the recipe:

Whole Wheat Flax Scones

Sara’s Whole Wheat and Flax Scones

Servings: 16


  • 2 cups whole-wheat flour
  • 1 cup ground flax seeds
  • 2/3 cups sugar
  • 5 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 sticks unsalted butter, chilled
  • 3/4 cups heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Unrefined sugar (to top scones)


  1. Preheat oven to 350 Fahrenheit
  2. Mix flour, flax, sugar, baking powder, and salt
  3. Cut the cold butter into small pats
  4. Use a pastry cutter (or fork) to mix butter and dry ingredients
  5. Mix vanilla, cream, and egg in a separate bowl
  6. Mix all ingredients together
  7. With floured hands/rolling pin, shape dough into a rectangle on a floured surface that is ½ to ¾ inches thick
  8. With a butter knife, cut dough into small triangles (first squares, then diagonal cuts)
  9. Bake for 18-20 minutes
  10. Cool on rack for 15 minutes before transferring.

Note: You can use a whole egg to make a half-batch.
